Scotland’s Special Needs Schools.
PERIOD OF SERVICE
We have been there since August 2017 and continue to provide the service.
SERVICE PROVIDED
We provide Catering Consultancy providing the Chef Managers
THE CHALLENGE
We were asked to take over the service as the staffing model needed to change and the menus needed a full review from previous pre-prepared products and lack of fruit and vegetables. The individual nutritional needs of the pupils were not being catered for.
OUR SOLUTION
We reviewed and updated the menus with consultation and input from the Clients, Care staff, Dietitian and Speech and Language Therapists.
We have provided a balanced menu with which is enjoyed by the children and young people. The menus are updated twice a year to work around the school year and are adjusted to take into consideration the season as well as the feedback on how the meals are being enjoyed.
We work with the Dietitian to ensure the many special diets are catered for including texture modification, allergies and intolerances of many foods including milk, gluten, strawberries and egg, tasters for pupils who are tube fed, autism, fortification and ketogenic to name but a few.
We have a menu that the children and young people enjoy and a culture where their feedback and opinion help’s us to update and change the menus. We have special occasion meals, and everyone is included regardless of any special dietary need.
Our Chef Managers talk to the children and young people about what they would like each day and how their meal was and in one school the Chef has been involved with cooking sessions in class. They work with the pupil’s preferences and will always make a separate meal for anyone who wants a different choice.
